Almond Croissants

Ingredients
  

Pastry
  • 4 Large Butter Croissants A pack of day-olds from your local grocery store will do the trick and is preferred!
Filling
  • 4 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon almond extract
  • 3/4 cup almond flour
Syrup
  • 1 tablespoon granulated sugar
  • 1 1/2 tablespoons water
  • 1/2 teaspoon almond extract
Topping (Optional)
  • 2 tablespoons sliced or crushed almonds
  • 1-2 tablespoons powdered sugar

Equipment

  • 1 Bread Knife
  • 1 Parchment Paper
  • 1 Sheet Pan
  • 1 Stand or Hand Mixer
  • 1 Large Mixing Bowl
  • 1 Microwave Safe Bowl
  • 1 Pastry Brush
  • 1 Powdered Sugar Shaker

Method
 

Filling
  1. Use a stand or hand mixer to cream together the butter (4 tbs) and sugar (1/4 c) in a mixing bowl until well combined ~1 minute.
  2. Add the egg (1 egg) and almond extract (1 tsp) to the butter-sugar mixture and beat on medium speed until well combined -mix thoroughly.
  3. Add the almond flour (3/4 c) on low speed until well combined ~30 seconds.
Syrup
  1. In a small, microwave-safe bowl, combine the sugar (1 tbsp) and water (1 1/2 tbsp), then heat in the microwave for 15-20 secs. Add the almond extract (1/2 tsp).
Assembly
  1. Preheat oven to 350 F
  2. Line your baking sheet with parchment paper
  3. Slice the croissants in half
  4. Lightly brush the cut croissant sides with the syrup mixture
  5. Spread 2-3 tbsp of filling on the bottom half of the croissant (or more if you skip adding some to the top)
  6. Sandwich the croissant back together
  7. Lightly brush the top of the croissant with syrup (optional)
  8. Spread a thin layer of filling on the top of the croissant (optional)
  9. Sprinkle the tops with 1 1/2 tsp of sliced or crushed up almonds (optional)
  10. Bake 8-10 minutes until they are lightly brown - keep an eye on them!
  11. Remove from the oven and dust your croissants with powdered sugar (optional but recommended!)
  12. Allow them to slightly cool before eating!
