Not every moment of joy in the kitchen has to begin from scratch. Sometimes, the most intentional acts come from making the most of what we already have. This almond croissant recipe is one of my favorite cozy rituals — a simple upgrade to store-bought croissants that feels luxurious, creative, and just indulgent enough. It’s about slowing down, savoring the process, and giving yourself permission to enjoy beautiful, homemade-feeling moments without the overwhelm. Whether you’re treating yourself on a quiet weekend or making something special to share, this is comfort made simple.

- Use a stand or hand mixer to cream together the butter (4 tbs) and sugar (1/4 c) in a mixing bowl until well combined ~1 minute.
- Add the egg (1 egg) and almond extract (1 tsp) to the butter-sugar mixture and beat on medium speed until well combined -mix thoroughly.
- Add the almond flour (3/4 c) on low speed until well combined ~30 seconds.
- In a small, microwave-safe bowl, combine the sugar (1 tbsp) and water (1 1/2 tbsp), then heat in the microwave for 15-20 secs. Add the almond extract (1/2 tsp).
- Preheat oven to 350 F
- Line your baking sheet with parchment paper
- Slice the croissants in half
- Lightly brush the cut croissant sides with the syrup mixture
- Spread 2-3 tbsp of filling on the bottom half of the croissant (or more if you skip adding some to the top)
- Sandwich the croissant back together
- Lightly brush the top of the croissant with syrup (optional)
- Spread a thin layer of filling on the top of the croissant (optional)
- Sprinkle the tops with 1 1/2 tsp of sliced or crushed up almonds (optional)
- Bake 8-10 minutes until they are lightly brown – keep an eye on them!
- Remove from the oven and dust your croissants with powdered sugar (optional but recommended!)
- Allow them to slightly cool before eating!
